Varu Payaru / Roasted Grams or lentils /Varavarisi

Roasted gram or Varu payaru as its called in Tamil , is a forgotten  snack , which is very healthy and rice in protein. Its specially good for growing children and canbe introduced as a snack or tea time  munchies . They are excellent diet snacks too for the calorie conscious . The roasted grams are of different variety in Varu Payaru , and its tasty  and crunchy .too  Its requires a variety of easily available lentils / gram and few other ingredients . The procedure to make the snack too is not very elaborate . It just needs a bit of patience .

Generally Varu payaru is prepared during Seemantham and its generally offered to pregnant women .

  1. Kondakadalai ( chick peas )  2 cups
  2. Mochaikottai  ( field beans )   2 cups
  3.  Pachai payaru ( whole ) Green gram   2 cups
  4. Kollu or horse gram 2 cups
  5. Cow peas 2 cups
  6. Sesame seeds ( white ) 2 cups
  7. Beaten rice flakes ( Aval )   1 cup
  8. Groundnuts   2 cups
  9. Coconut   ( Cut into thin slices )  1 cup
  10. Salt Cheedais      1/2 cup
  11. Salt 1/2 cup
  12. Red chilies  Powder 1 cup
  13. Turmeric Powder    2 tablespoons
  14. Asafoetida or Hing   1  teaspoon

  • Soak all the pulses / cereals  (Chickpeas, Green gram , Horsegram, Cowpeas , Mochai ) for 8 hours, separately  . Soak the  Sesame seeds for 2 hours or so.
  • Wash each separately and drain well . Spread on a muslin cloth and dry in shade . make sure the cereals are dried well.
  • Ina earthen kadai or deep pan , and heat it in low flame . Dry roast  the cereals , one by one , patiently in low heat .
  • See to that they are well roasted and they puff or splutter , indicating they are well roasted .
  • Dry roast the Aval  , coconut slices and ground nuts too , one by one  , till they are crisp .
  • Mix all the ingredients together , add salt , chili powder , hing , and turmeric powder .
  • Mix and make a fantastic cereal mixture ready .
