TOMATO RICE/ THAKKALI SAADAM/TAMATAR KE CHAWAL

One pot meals are a boon for office goers .Not only they are nourishing , filling but also they can be prepared in less time .
Posting Tomato Rice recipe , which is ideal for children’s lunch box too.
It requires very few ingredients and spices , but tastes awesome with raita , chips or papad or appalam .
TOMATO RICE
INGREDIENTS
Tomatoes 5 in number medium size (chopped fine )
Onions 2 (chopped fine) medium size
Green chillies 4 (chopped fine)
Garlic (optional) 4 pods (chopped fine)
Ginger grated 1 tablespoon
Rice 1 cup (soaked for 15minutes )
Ghee/ oil of your choice 4 tablespoons
Cumin seeds 1 teaspoon
Sambaar Powder 1 tablespoon
Turmeric powder half a teaspoon
Salt 2 teaspoon
Curry leaves few
Coriander leaves for garnish few sprigs
Asafoetida 1/4 teaspoon
METHOD
Cook the rice , adding 2 cups of water , till it has separate grains .
In a deep kadai / pan , add ghee , when it’s hot , add cumin seeds , as it crackles , add green chillies , ginger , garlic and saute for a minute .
Add chopped onions , stir and shallow fry till translucent .
Add chopped tomatoes , salt , turmeric powder , , curry leaves and asafoetida , stir and cook till tomatoes are mushy .
Add sambar powder , mix well .
Add the cooked rice into the kadai and mix well.
Garnish with coriander leaves .
Add of dollop of extra ghee on top , if you like it so .
Be ready to devour , along with Raita , chips or pappadaam .
NOTE
You can use rice of your choice .Usually local variety raw rice is used in make Tomato rice .
Basmati rice too can be used .
Country tomatoes are used to give a tangy flovour to the rice .
Hybrid varieties can be used too .
Sauteed mushy tomatoes can be made into paste , and fried for a few minutes and then rice could be added .
Instead of Sambaar Powder you can use whole spices like cardamom , cloves , cinnamom along with cumin seeds , to give a masala flavour to.the rice .
Other vegetables like capsicum or potatoes can be added .
Nuts like cashewnuts or peanuts can be fried and added as a garnish
