Sago /Tapioca pearl Fritters, Javvarasi vadai/ Sabudana vada

 

Sago or Sabudana /Tapioca pearls is generally used as a fasting food , in India . During fasts , common grains like rice ,wheat are avoided,apart from onions and garlic .Common salt too is replaced by pink salt .
During these fasts this particular snack can be eaten , when hungry .
Potatoes are added to Sabudana /Javvarasi , to make it a filling snack , so that one can remain without food for a longer time . This abstinence from food is practised in Hindi culture for centuries . Some fasts are very strict like the Ekadasi ones while some fasts undertaken during Navaratri time is a bit lenient . You can include Buck wheat flour(Kuttu ka Atta )Amaranth flour etc .
This vadai is absolutely delicious and can be had as a snack on other days too .

Ingredients for Javvarasi vadai /sago vadai

Ingredients

  • Sago /Tapioca pearls 1 cup
  • Potato 4 medium size (cooked )
  • Salt 1 teaspoon
  • Coriander leaves 1/2 cup chopped
  • Green chillies 4 (chopped fine )
  • Ginger grated 1/2 teaspoon ,
  • Oil half litre for deep frying

    Method

    Soak the Sabudana /Tapioca pearls for 6 to 8 hours adding 2 to 21/2 cups water .
  • When soft , drain all the water and keep aside . Take a few and press between your fingers .If they get are soft and mushy , they are well soaked .
  • Make sure they don’t have much moisture .
  • Crumble the potatoes with your hands , well.
  • Add green chillies , salt , ginger coriander leaves and drained sago and mix well
  • Take a little of the mixture (small ball size), and flatten it on your palm in the shape of vadai and keep aside .
  • Make such vadais from the mixture . Keep aside
  • Heat a deep bottomed pan , add oil .
  • Once the oil becomes hot , slip the vadais into the oil four or five in a batch and deep fry to golden brown
  • Remove with a slotted ladle and drain .
  • Serve hot with chutney or sauce
  • Note

  • If you find the sago potato mixture a little watery or has moisture , add some amaranth flour or buckwheat flour /rice flour /corn flour and make it stiff .
  • You can add peanuts to the above mixture to make it  crunchy.
