Race Kuzhambu / Thick Tamarind Vegetable Sauce

 

 

 

This kozhambu is tamarind based and is similar to Vetha kuzhambu . However , the spices added to the kozhambu , make them taste different .

If you are bored of the routine menu , you can try this kuzhambu at home and relish .

A variety of dals are added to the kuzhambu along with brinjals and ladies finger .

  1. Chana dal 1 teaspoon
  2. Tuvar Dal 1 teaspoon
  3. Moong dal 1 teaspoon
  4. Black gram dal ( Urad Dal) 1 teaspoon
  5. Asafoetida ( Perungayam) / Hing 1 inch or a quarter of a teaspoon
  6. Tamarind 1 lemon size
  7. Black Pepper  6 to 8 corns
  8. Coriander seeds 2 teaspoons
  9. Mustard  1 teaspoon
  10. Salt 1 1/2 teaspoon
  11. Sesame Oil 1/4 cup and a little more
  12. Dried Red chilies 6
  13. Fenugreek seeds 1/2 teaspoon
  14. Green chilies 5 to 6 ( slit into two)
  15. Vegetable 1/2 cup cut medium size
  16. Rice flour 1 teaspoon

 

Method

Method

  • Soak tamarind in two and half cups of water.
  • In a kadai or a pan , add fenugreek seeds and when slightly red , remove and keep aside.
  • Add 6 teaspoons of oil to the same pan and add all the dals and shallow fry till light brown.
  • Add Asafoetida , Red chilies ,Black Pepper , Coriander seeds and shallow fry for  minute. Powder to a smooth texture  and keep aside.
  • Extract juice from the  soaked tamarind .
  • In the same kadai , add remaining oil , heat . Add mustard . As it crackles , add green chilies.
    Add the chopped vegetables and salt .
  • After a minute , add the tamarind juice . Mix the powder , stir .
  • Cook in low flame  till the juice thickens .
  • Add rice flour mixed in a tablespoon of water .
  • The  Race kuzhambu will thicken further . After a minute or two remove from fire .
  • Sprinkle some curry leaves on top .
  • Serve hot with Rice.

  • The vegetables which can be used are brinjals , ladies finger . These are the first choices. Drumstick is the second choice .
