Pepper – Cumin Flattened Rice Upma / Milagu- Jeera Aval Upma

 

 

Milagu – Jeera Aval is a simple preparation , which is filling , easy to make and nutritious . The flavour of pepper and cumin, makes the dish mildly spicy and tasty . Its easy on the stomach too . This is a no onion – garlic recipe . This dish is easy to make, hence can be prepared, by spinsters, young students and people who do not know much of cooking.  Its an ideal breakfast dish and can be a dinner menu too.

Aval or flattened rice should be of  a thicker variety to make this Upma. Thin ones get easily soaked and tend to crumble fast . Red Aval too,  can be used for this recipe.

Ingredients

  1. Flattened Rice / Aval 2 cups
  2. Cumin seed powder   half a teaspoon
  3. Black Pepper powder   One teaspoon
  4. Peanuts 1/4 cup
  5. Ghee/ Oil  1 tablespoon
  6. Mustard 1/2 teaspoon
  7. Curry leaves  few sprigs
  8. Salt  1 teaspoon
  9. Coriander leaves ( chopped)  3 tablespoons
  10. Turmeric powder 1/2 teaspoon

Method

  • Soak the Aval in 2 cups of water , for 3 to 5  minutes .  Squeeze out water , keep aside .
  • In a kadai or a pan heat oil or ghee . Add the mustard and when it crackles, add the peanuts and shallow fry till light brown.
  • Add cumin seed powder and black pepper powder .
  • Add the flattened rice , and stir . Add salt and turmeric powder  and mix well.
  • Sprinkle curry leaves and coriander leaves .
  • Add a teaspoon of lemon juice and serve hot .
