Uppadam is traditional dish , from Palakkad , which resembles the Vethakuzhambu , but its less fiery and very easy to make . It pairs well with rice and Paruppu Podi. Vathal or dried vegetables are used . Manathakkali and Ladies finger makes a good Uppadam. Its very popular the Palakkad Iyer community .
Ingredients
- Tamarind lemon size
- Black night shade 1/4 cup
- Rock salt 1 1/2 pio teaspoon
- Red chili 6
- Green chilies 4
- Ladies finger 1 cup chopped
- Manathakkali / Black Nightshade (dried) 1/2 cup
- Fenugreek seeds 1 teaspoon
- Mustard 1 teaspoon
- Sesame oil 6 teaspoons
- Rice 4 teaspoon
- Asafoetida 1/4 teaspoon
Method
- Soak the tamarind in two cups water for 15 minutes and extract juice .
- In a kadai or deep bottomed pan, dry roast the rice for a minute .Heat two teaspoon of oil, shallow fry half a teaspoon of fenugreek seeds and red chilies to reddish brown.
- Powder rice , chili and fenugreek seeds, to a smooth powder .
- Heat rest of the oil in the kadai ,add mustard . When it crackles , add fenugreek seeds and green chilies .
- Add chopped ladies finger and Manathakkali and shallow fry for a minute or two .
- Add the tamarind juice , salt and asafoetida .
- Add 4 tablespoons of water to the powder and mix well . Add to the boiling Uppadam and cook in low heat .
- When the whole mixture boils well , remove from fire .Add curry leaves .
- Serve hot with rice .
