Coriander seeds Powder/ Kothamalli Podi

Coriander seed powder,  makes for a delicious powder, to be eaten with rice . When you run out of vegetables or are  unable to cook due to ill health or work pressure, this podi comes in handy . This is especially useful, for young men and women, living away from their homes , longing for home food .  Many anxious mothers whose  daughters and sons study or work abroad , make this powder and send it to their children to make their life easy .Many young women with infants and toddlers too, can make this powder and keep , to help,  during long working days .

The  cooked rice tastes divine, when added with the  coriander powder and makes for a wonderful , filling meal.

 

Ingredients

  1. Coriander seeds/ Dhania  1 cup
  2. Urad dal / Blackgram  2 teaspoons
  3. Mustard 1 teaspoon
  4. Chana dal / Bengalgram dal 1 teaspoon (optional)
  5. Asafoetida /Perungayam  10  grams
  6. Oil (Sesame )   6 teaspoons
  7. Dried Red Chili   6 to 8
  8. Salt                   1 Tablespoons
  9. Tamarind  20 to 30 grams

  • In a kadai or a saute pan , heat  3  teaspoons of oil , add coriander seeds and shallow fry , till it releases an aroma . Shallow fry in low heat.
  • Remove from the kadai and keep aside in a plate .
  • Add urad  dal , chana dal and dried red chilies and shallow fry in the same  pan , adding 3 more teaspoons of oil. Shallow fry, till light brown.
  • Remove and keep aside . Add rest of the oil and add mustard to the same pan . As it crackles , add asafoetida . Remove and keep aside .
  • In a mortar – pestle or  a mixie, add the tamarind and  salt . Grind it roughly . Add coriander seeds and powder to the whole mixture .
  • Add the dal and red chilies and powder again to a fine powder .
  • Add mustard and asafoetida and grind again roughly.
  • Bottle it and use it with rice and sesame oil . It makes for a delicious recipe , especially when you run out of vegetables and are low in energy.

Note

  • Always use a clean spoon while , using the powder .
  • Use fresh ingredients, for making any type of powder , so that it lasts long and does’nt taste stale .
  • Add more chilies or tamarind or salt depending on your taste .
