Ladies finger , is a very common vegetable, eaten with rice , in most South Indian homes . Ladies finger , is easily available, mostly, in all seasons. It is easy to cut and quick to prepare . Generally its made, with just salt , turmeric and hing or perungaayam . You can add other vegatables like onions , potatoes etc to enhance the flavour .
Choose fresh and tender ladies finger . which are bright green in colour . Generally the bottom tip of the ladies finger is broken , to check if the ladies finger is fresh . If it breaks easily ,the ladies finger is tender and fresh . Wash them well and dry them in a kitchen towel to remove the moisture . If moisture is present, while cooking the preparation will become sticky . So dry the ladies finger well , before cutting .
Use a iron kadai for cooking the ladies finger to get a great taste .
Ingredients
- Ladies finger ( chopped fine ) 2 cups
- Oil ( coconut / sesame ) 4 tablespoons
- Turmeric powder 1/2 teaspoon
- Salt 1 teaspoon
- Sambaar Powder 1 teaspoon
- Hing or Perungaayam 1/2 teaspoon
- Mustard 1 teaspoon
- Cumin seeds 1/2 teaspoon
- Dried red chilies 4 ( broken into two )
Method
- In kadai , heat oil . Add mustard , when it crackles , add broken red chilies , cumin seeds and saute for a minute .
- Add the chopped ladies finger, salt and turmeric powder and stir .
- Cook in low heat , for five to eight minutes . Stir off and on.
- See if the vegetable is cooked . If nearly done, add sambaar powder and perungaayaum. Stir and cook till done .
- When soft ,remove from fire and serve with rice .
