Cucumber Raita / Cucumber Thayir Pachadi / Vellarikkai Thayir Pachadi

 

Cucumber is a vegetable eaten , mostly as a salad . However , its also used in Raita or Pachadi , in Indian cooking . Cucumber is mixed with curd and served with Biriyani ,Pulao or Brinji . It has high water content and low calories . Its light on the stomach and promotes bowel movement . It helps people suffering from constiparion and aids weight loss too . They are a great summer vegetable.

Many vegatables like onion, tomatoes , carrot , beetroot , plantain stem etc are used , in Pachadi . However ,cucumber is most common of them all .

Ingredients

  1. Cucumber  2 ( peeled and grated )
  2. Curd  2 cups
  3. Salt   as desired
  4. Green chilies  2 ( chopped)
  5. Cumin seeds   half a teaspoon
  6. Coriander leaves   1 tablespoon ( chopped fine )
  7. Curry leaves few
  8. Oil 1 teaspoon
  9. Mustard 1/2 teaspoon
  10. Coconut ( grated )  2 tablespoons

Method

  • Whisk the curd in a broad bowl.
  • Squeeze the grated cucumber and remove excess water . Add salt and keep aside .
  • Make a paste of  grated coconut , green chilies and cumin seeds . Add to the curd.
  • Squeeze the grated cucumber , again and add to the curd . Mix well.
  • Season with mustard and curry leaves,  in a teaspoon of oil . Add to the raita, along with some coriander leaves ,as garnish .
