Ellu Podi/ Sesame Powder for Idli and Dosai

 

 

Indian cuisine especially South Indian has a plethora of chutneys , thogaiyals and powder to enhance the taste of  day to day cuisine . Ellu Powder is one such powder which accompanies dosai . idly  idiappams and many more .

Sesame seeds has loads of benefits too . It has high amount   of omega fatty acids which help in hair growth. It reverses ageing and keep the skin supple. Black sesame seeds have calcium and zinc which help in keeping the bones in top condition.

Ingredients

  1.  Black Sesame seeds half a cup
  2. Dried Red chilies 2 cups
  3. Urad dal ( black gram dal) 1/4 of a cup
  4. Mustard 1 teaspoon
  5. Asafoetida 1/4 teaspoon
  6. Salt 1/4 cup
  7. Sesame Oil  3 tablespoons

Method

Method

  • In a small Cheena Chatti or Sauce pan ,   add oil  and  heat it. Add Sesame seeds and when it pops , drain and remove .
  • Add Red chillies in the same pan and shallow fry the chilies , till they become hot . Remove them .
  • Add mustard and urad dal , separately and fry till the mustard bursts and Urad dal become light brown.
  • Powder the red chilies to a  coarse powder. Then add rest of the ingredients , along with salt to make a smooth powder.
  • Store and enjoy with dosai and idlies .
  • It holds good for more than a month.

You can make the powder with deskinned sesame or white sesame seeds , too.
