When we are rushed or have less time to prepare full fledged menu , the one pot meals or mixed rice options , come as a blessing. Its especially true for weekdays.
Its also very tasty and absolutely lipsmacking .
Ingredients
- Coriander leaves 2 cups ( destalked ,cleaned )
- Tamarind a marble size
- Salt 1 teaspoon
- Urad dal / Blackgram dal
- Oil 4 teaspoons
- Mustard 1 teaspoon
- Red chilies 5 to 8
- Asafoetida 1/2 teaspoon
- Cooked rice 1 cup
- Groundnuts / Cashewnuts 2 tablespoons (optional)
Method
- Cook rice to a fluffy texture .
- In a kadai , heat oil and add the mustard, red chilies , and urad dal . When the mustard crackles , remove and keep aside .
- Add coriander, salt , asafoetida and tamarind , in the same kadai and stir for a minute . Keep aside .
- Add the nuts to the same kadai and roast till crisp.
- Grind the coriander leaves mixture to a thick paste , adding little or no water.
- Add the mustard , dal and red chilies and grind again , mildly .
- A flavorful tangy thogaiyal is ready .
- Add this to the cooked rice and mix with a fork. Add roasted nuts .
- Add sesame oil on top and savor with raita and salad.
