Thattai / Raw Rice Thattai

This is a Festival preparation for Krishna Jayanthi or Janmashtami. This salty crispy snack, is ideal for a cozy lazy evening snack with family and friends. It needs very few ingredients and is a wonderful snack which can be made at home.

  1. Raw Rice 2 cups
  2. Urad dal   2 tablespoons (Blackgram dal)
  3. Salt 1/4 cup
  4. Sesame seeds 4 tablespoons
  5. Chana dal 4 tablespoons (Bengal gram dal)
  6. Chili powder 2 teaspoons
  7. Butter (soft)/ Ghee  1 tablespoon
  8. Asafoetida 1 teaspoon
  9. Coconut Oil 1 litre

  • Soak the rice for two hours . Drain , wash again and drain . Spread it on a muslin cloth or tray to dry in the sun, till its completely dry .
  • Powder in a food processor or mixie to a fine powder . Sieve it well and use .
  • Soak the chana dal for an hour .
  • Dry roast the Urad dal in a kadai to light brown or till it gives an aroma. Remove and cool a bit . Powder them fine.
  • Ina big bowl , add the rice flour ,  urad dal powder , chili powder, asafoetida , drained chana dal , sesame seeds , salt and butter .
  • Mix well . Add water  gradually and  knead into  a soft dough.
  • Heat oil in a deep bottomed Kadai / pan. Grease a butter paper or a plastic sheet or a plantain leaf.
  • Take a little of the dough , as  big as a lemon  and flatten it out in a  greased plantain leaf / plastic sheet or  a butter paper to make  small circle .
  • Use your palm to flatten the thattais . Make four to five Thattais at a time .
  • Check the oil for its hotness , If hot, slide the round thattais into the oil. Deep fry nthem  till golden brown in medium heat or till the sizzling sound of the oil stops.
  • Repeat the same , till all the dough is exhausted .
  • Adjust the heat of the oil, from high to medium high fromtime to time so that the Thattais do not get scorched .
  • Crispy Thattais are ready to be offered as an offering .
  • Relish it at leisure.

Note

Note

  • More chili powder can be added to the thattai dough to make more spicy.
  • Black Pepper can be added too to the Thattai dough.
  • If  making Thattais  in large quantities , heat some water and add  a small piece of pirandai and  salt to it . Let the salt dissolve completely in the  water .
  • Remove and add the water to the dough to knead. The thattais will be very crispy , when made .
  • If there is no sufficient ghee or butter to add to the dough, quarter teaspoon of baking soda can be added to the little ghee used .
  • Rub the ghee and baking soda and mix till it becomes a frothy paste. Knead this into the dough.
  • This method can be followed if large quantities of Thattais are to be made .
  • When the Thattais are to be prepared in large quantities , increase the oil quantity too , in which it is to be fried .
  •  Ready made Rice flour too can be used, for making Thattais. One need not soak and powder the rice .
  • Curry leaves can be added to the Thattais. Some add garlic paste too while making Thattais .
