Aval Payasam/ Flattened Rice Pudding / Pohe Ki Kheer

 

 

One of the simplest Payasam or Kheer, one can make is Aval or Flattened Rice Payasam. The flattened rice is easy to cook, hence this Payasam gets done in matter of minutes.

Its tasty too and liked by all age groups. Its a must to do menu during  Janmashtami,  as its considered that Lord Krishna likes   Aval / Flattened rice.

  1. Flattened Rice 1/4 cup
  2. Milk 2 cups
  3. Sugar / Palm Sugar / Jaggery  3/ 4 cups
  4. Cardamom 1/2 teaspoon
  5. Saffron 2 to 3 strands (optional)
  6. Edible camphor a pinch (optional)
  7. Ghee 4 teaspoons
  8. Cashewnuts broken 1 tablespoon

Method

  • In  a small Uruli or a thick bottomed pan, add ghee . Shallow fry the cashewnuts to light brown . Remove and keep aside.
  • Soak the saffron in a tablespoon of milk.
  • Add flattened rice to the Uruli or pan and shallow fry to reddish brown.
  • Boil milk and simmer for two to three minutes. Add the Flattened rice and stir .
  • Cook till soft . Add sugar . when it dissolves , add cardamom powder and saffron.
  • Remove from fire and add cashewnuts .
  • Delicious Aval Payasam is ready to serve .

Note

 

  • If you use , full cream milk , then the payasam will be more tasty.
  • Add Jaggery or Palm sugar instead of refined sugar,  to make it more healthy.
  • You can add more sugar or reduce, according to your taste.
  • If Vegan, use Almond or Coconut Milk.
  • Aval/Flattened rice can be soaked in water for one minute , drained and then added to the boiling milk.
