Sweet Potato Curry / Chakkaravalli Khizhangu Curry

 

 

One of the best root vegetable, which has high fiber content is sweet potato. Its rich in Vit A and helps in digestion. They have cancer fighting properties and good  for brain function too.

The mild pinkish variety is available in India which ls  used to make chips or curry for rice . Its easy to cook just like potato and delicious to eat too.

  1. Sweet Potato half a kilo
  2. Oil 2 teaspoons
  3. Urad dal 1/2 teaspoon
  4. Dried Red chilies 4
  5. Mustard 1/2 teaspoon
  6. Salt  1 teaspoon

Method

Method

  • Chop each  sweet potato into two . Steam or cook till firm but not mushy.
  •  Peel and crumble them or slice them . Add salt , turmeric powder and mix well/
  • In a sauce pan , add oil and heat it. Add mustard , as it crackles , add urad dal and redchilies.
  • Add the sweet potato , mix well and serve hot with rice .
  • A delicious curry is ready to eat .

 

Note

  • You can add more red chilies or green chilies to make the curry spicy.
  • Add curry leaves and coriander leaves to make it flavorful.
