Ishtu or Potato stew is common side dish , which is popular in Kerala and in some parts of Tamilnadu . In Tamilnadu , its mostly referred to as Potato stew . The Potato stew is a mild dish and doesnt have many spices or condiments . The stew has boiled potatoes simmered in coconut milk , which is generally extracted fresh . The coconut milk adds flavor and taste to the dish and pepper in the dish adds fieriness, to make it a simple tasty side dish.
Its generally , eaten with chapathi , parotta , Idly , dosai , idiyaappam and aappam .

- Potatoes 6 (Medium size )
- Coconut ( grated ) 2 to 3 cups
- Salt 1 1/2 teaspoons
- Black Pepper corns 1/2 a teaspoons ( coarsely powdered )
- Onion 1 , chopped ( fine )
- Coconut Oil / Ghee 2 teaspoons
- Green chili ( spilt ) 1
- Curry leaves few

Method
- Cut the potatoes , into two , cook them till soft . Peel them.
- In a kadai , add ghee or oil and shallow fry the onions and green chili .
- Extract coconut milk from the grated coconut , adding 1 cup of water . Strain and keep aside . This thick milk is the first extract .
- Add some more water and grind the coconut and extract milk . Strain and keep aside . This is second extract.
- Add a little water, to the remaining coconut pulp and extract the third milk . This milk will be diluted and thin .
- Add the third extract, to the fried onions . Cook for a minute or two in low heat .
- Add the second extract and cook again for 3 to 4 , minutes .
- Add the thick first extract , and boiled potatoes and cook in low heat . Add salt and black pepper powder .
- Cook till it comes to a boil . Remove from fire and garnish with curry leaves . Serve hot .
