The benefits of plantain are plenty and therefore, it should be included in our daily cooking . Its clears the stomach and prevents digestive disorders . Its acts as a coolant and prevents acidity . Its a weight loss agent and its juice helps in dissolving stones in the kidney . The fat and cholesterol levels decrease if its taken regularly in your diet .
One easy quick dish, which can be made from tender plantain stem is Kosumalli or South Indian salad.
Ingredients
- Plantain stem ( chopped fine ) 1 cup
- Buttermilk 2 cups
- Salt 1/2 teaspoon
- Turmeric Powder a pinch
- Oil 2 teaspoon
- Mustard 1/2 teaspoon
- Green chilies 2 ( chopped fine)
- Lemon juice 4 tablespoons
- Curry leaves few
- Asafoetida powder 1/2 teaspoon
Method
- Soak the chopped plantain stem in the buttermilk .
- After half an hour , drain the chopped bits and add salt and turmeric powder .
- Squeeze again, after 5 minutes and remove excess water.
- Heat oil in a saute pan or small tempering kadai , add mustard , when it splutters , add green chilies and asafoetida . Season .
- Add curry leaves , coriander leaves for garnish.
Note
- Grated coconut and half cooked moong dal can be added to the Kosumalli .
