Kesari or Semolina Fudge, is a common sweet , which is made at the drop of the hat in India . It is extremely easy to make , with common ingredients available in the Indian kitchen .
Many a times , Kesari is also made, adding fruits available, in the season . One such Kesari is, Mango Kesari . When mangoes are in season , use them to make this delicious sweet .
Ingredients
- Mango Fibrous variety 1
- Sugar 1 cup
- Rava / Semolina 1 cup
- Ghee 1/4 cup
- Water 3 cups
- Cashew Nuts few
- Cardamom Powder 1/2 teaspoon
Method
- In a deep bottomed pan , add two teaspoons of ghee . Add Cashewnuts and shallow fry . When they become brown , remove them .
- Meanwhile heat water , in a bowl . Remove pulp from the mango and blend them to a puree.
- Add three to four more teaspoons of ghee and shallow fry semolina in the same pan , in low heat . Stir . When they become crisp and light brown , add hot water and stir continuously.
- Cook till all the water is absorbed . Add sugar and mango pulp . Stir well .
- The Kesari will become watery, on adding sugar . When it thickens , add cardamom powder and cashewnuts and mix well .
- Add ghee on top and give a final stir .
- Tasty kesari is ready .
