Karunaikizhangu / Yam is a root vegetable , which is used regularly in Tamilian cuisine . It balances the Kapham , Vatham and Pitham imbalances in the body . Ingredients
- Yam (peeled and chopped medium size ) 1 cup
- Tuvar dal ( cooked ) 1/2 cup
- Tamarind lemon size
- Salt 1 tablespoon
- Coconut milk half cup
- Turmeric Powder 1/2 teaspoon
- Coconut oil 1 teaspoon
- Mustard 1/2 teaspoon
- Ginger ( chopped ) 1/2 teaspoon
- Green chilies 4 ( chopped fine )
- Urad dal 1/2 teaspoon
- Curry leaves few
Method
- Cook the Yam separately , adding turmeric powder and salt . Cook them well . Mash them,when done.
- Soak the tamarind in two cups of water . Extract thick juice after 15 minutes .
- Heat the tamarind juice, adding curry leaves . When it comes to a boil, add the cooked yam.
- Cook in low heat till the juice reduces a little . Add the cooked dal and stir .
- Season in hot coconut oil , mustard , urad dal . ginger and green chilies .
- Add to the gravy . Add the coconut milk too, and let it boil for a minute or so .
- The sauce may be thick , when done . However you can make a loose gravy too .
- Serve hot with rice .
- Coconut can be ground , in a little water and added too , instead of coconut milk .
