Instant Lemon Rice Sevai

 

 

Rice Sevai  is an ideal breakfast or snack option and can be made in many ways . Lemon Sevai is the easiest of them all .  The Sevai is tangy and delicious with some crunch. Its a ideal picnic option too .

 

Ingredients

Instant rice sevai is availble in the market .

  1. Instant rice sevai    2 cups
  2. Water  6 cups
  3. Salt 1 teaspoon
  4. Lemon juice  4 tablespoons
  5. Green chilies  6 ( finely chopped )
  6. Curry leaves  Few
  7. Oil          4   tablespoons
  8. Mustard    1 teaspoon
  9. Peanuts       1/4 cup
  10. Coriander leaves  a handful
  11. Urad dal 1 teaspoon
  12. Turmeric Powder  1/2 teaspoon
  13. Grated ginger  1/2 teaspoon
  14. Chana dal 1 teaspoon
  15. Hing / Asafoetida / Perungaayam  1/2 teaspoon

 

Method

  • Boil the water in a wide vessel . Add some salt to it .
  • Add the sevai , when the water starts boiling . Cook  for 3 minutes or so .
  • Drain after 3 minutes . Make sure , that the sevai does not cook , too long in the water . Otherwise, it will be limp   .
  • In a shallow pan , add oil . When it heats up add the mustard . When the mustard crackles , add urad dal chana dal ,green chilies , grated ginger , hing and turmeric powder .
  • Add peanuts and saute for two minutes . Add cooked sevai and curry leaves . Remove from fire and mix every thing , together .
  • Add more salt, if it is required
  • Add lemon juice and mix again .
  • Garnish with coriander leaves .
  • Tasty sevai is ready.
  • Serve with Getti chutney .
