Pumpkin Poriyal / Pumpkin Curry /Parangikkai Poriyal

 

Pumpkin is a nutritious vegetable,  which is nutrient dense. This Pumpkin curry is very tasty and is simple to make . The Pumpkin cooks faster , so its delicious to taste . This Pumpkin curry can be served with rice .

Ingredients

  1. Pumpkin ( chopped to medium size )      2 cups
  2. Turmeric Powder 1/2 teaspoon
  3. Salt 1 teaspoon
  4. Curry leaves   few
  5. Oil   1 teaspoon
  6. Mustard   1 teaspoon
  7. Green chilies 2 ( chopped  fine  )
  8. Dried red Chilies 2 ( broken into two )
  9. Hing or Asafoetida  1/2 teaspoon
  10. Grated coconut ( 1/4 cup)

Method

  • Steam the Pumpkin pieces , adding turmeric , curry leaves  and  salt in a electric rice cooker . When cooked  three fourths , remove and keep aside .
  • In a seasoning ladle or a shallow pan , heat oil .  When it gets hot, add mustard . When it crackles , add red chilies ,green chilies and hing .
  • Garnish over the cooked Pumpkin .  Add grated coconut if desired .
  • Serve hot with rice .
