Sundals are boiled dried lentils, which are seasoned with mustard and curry leaves . Mostly salty ones are made regularly . But this particular Sundal , made from Cowpea or Kaaramani , is a sweet one . Its a very tasty sundal, which is sweet and delicious . Its very easy to make and gets done quite fast . This Sundal is generally made, during the Navaratri , when a variety of Sundals are made on all the nine days . Its a welcome change from salty sundals , which is eaten on most days . This is also is a healthy snack in the evenings , instead of biscuits or other fried items, we tend to binge on . It is nutrient dense and fills the stomach till dinner time.
Ingredients
- Cow Peas or Kaaramani 1 cup
- Jaggery one fourth of a cup
- Salt half a teaspoon
- Grated coconut one fourths of a cup
- Oil 1 teaspoon
- Mustard half a teaspoon
- Dried red chili 2
- Curry leaves few
Method
- Dry roast the Kaaramani in a shallow pan . Soak for two to three hours . Pressure cook the kaaramani along with salt , for two to three whistles , or till it becomes well cooked or soft .
- However, it must’nt be mushy.
- In the same pan , add jaggery and melt . Add the cooked Kaaramani and mix well . Let it cook for a two to three minutes till all the moisture gets absorbed .
- Add coconut and stir.
- Season with mustard , curry leaves and red chili.
- Tasty Sundal is ready .
