The Indian vegetarian menu is dominated with root vegetable, Potato. However Chenai or elephant foot yam is profusely used in making various kind of delicious side dishes . The Thuvaram or curry made with spices and coconut , pairs well with rice . Yam is a n excellent source of Vitamin C and Vitamin B6 and regulates hormones in our system. The yam needs care while handling it , The outer skin is caked in mud , so remove it completely . Apply oil in your hands and chop it . Some people are allergic to yam and develop boils . So use gloves or smear oil while handling them.

- Elephant Yam ( cubed small ) 1 cup
- Salt as desired
- Oil 6 teaspoons
- Mustard 1 teaspoon
- Blackgram dal ( Urad Dal) 1 teaspoon
- Curry leaves few
- Hing ( asafoetida) 1/4 teaspoon
- Coconut ( grated) 1/2 cup
- Cumin seeds 1/2 teaspoon
- Red chilies 3 to 4

- In a kadai , add oil and heat it . Add mustard , when it crackles , add urad dal. Add the cubed yam and stir . Add salt , curry leaves and cook in low heat .
- Sprinkle a little water , over the mixture . Close and cook .
- Grind the coconut, red chilies , cumin seeds to a smooth paste.
- Add the paste, when the yam is nearly cooked and stir . When yam becomes very soft , hing and stir .
- Remove from fire . Serve with hot rice .
- Tasty side dish is ready.
