This koottu is a medley of vegetables , in thick coconut milk .
It’s a pretty bland dish and goes well with Parotta , Rotis , Idiyappam , Aappams and Rice too .
It’s a type of kurma with very little spices .where the coconut milk flavour rules the roost .
The choice of Vegetables are mainly , potatoes , peas , carrot , beans , cauliflower and beetroot

- Chopped Vegetables 2cups (medium size)
- Onion 2 chopped fine
- Tomatoes 4 chopped fine
- Coconut milk ( thick) one cup
- Thin coconut milk 2 cups
- Ghee 2 tablespoons
- Green chillies 4 to 6 chopped fine
- Salt as desired
- Mustard 1/2 teaspoon
- Cumin seeds 1/2 teaspoon (optional)
- Coriander powder (optional)
- Garam masala powder 1 teaspoon (optional)

Method
- In a kadai , heat ghee , add mustard , cumin seeds and green chillies , saute . When mustard crackles , add onions and shallow fry for a minute .
- Add chopped tomatoes and shallow fry for 2 minutes .
- Add rest of the vegetables, coriander powder and add the thin coconut milk .
- Add salt . Cover and cook till soft in low heat .
- When nearly well cooked , add thick coconut milk and stir .Add garam masala and cook for a minute or so .
- Shallow fry cashewnuts in a teaspoon of ghee to.golden brown and garnish
- Top with chopped coriander leaves .
- Serve hot Ceylon Koottu and relish with near and dear ones .

Note
- Take 2 cups of gratec coconut and add half cup.wster and grind in a processor or mixie .
- A thick coconut milk is got.Strain and keep aside .
- This is the thick coconut milk.
- Add one cup water to the ground mixture and grind again .
- A watery milk is obtained .This is the thin coconut milk .
- Use as given in the recipe .
- Add whole cloves , cardamom , cardamom to make the kootu spicy .
