Brinjal Puli Koottu is tangy, sour ,sweet dish which is a accompaniment with rice . The dish can be made with a variety of vegetables like Cluster beans , Plantain flower , Chayote squash , Sabre beans . This is a traditional recipe , which is not cooked much nowadays . a tasty quick , vegetarian side dish .

Ingredients
- Brinjals ( small variety ) 12
- Tamarind lemon size
- Salt 1 1/2 teaspoons
- Turmeric Powder 1/2 teaspoon
- Sambar Powder 2 teaspoons
- Grated coconut 1cup
- Sesame oil 1 tablespoon
- Mustard 1 teaspoon
- Urad dal 2 teaspoons
- Bengal gram (Chana ) dal 2 teaspoons
- Hing( Asafoetida ) 1/2 teaspoon
- Curry leaves few
- Rice flour 2 teaspoons ( optional)
- Jaggery Powder 1 teaspoon
Method
- Soak the tamarind in one cup of water. After fifteen minutes, extract thick juice .
- Slit the brinjals into thin slices . In a thick bottomed kadai , add oil and heat it .
- Add mustard and when it splutters , add urad dal, chana dal ,curry leaves and turmeric powder . Add the sliced brinjals and shallow fry for a minute or two .
- Add the extracted juice and salt and cook in low heat , till they come to a boil . Add sambar powder and hing, stir .
- Cook , till they become thick and brinjals become soft .
- Add 2 tablespoons of water to rice flour and add to the boiling koottu . Add jaggery powder and mix well .
- After a boil , the koottu becomes thick and remove from fire .
- Serve with rice .
