Bonda Mor Kuzhambu / Fritters in Buttermilk / Kalyana MorKuzhambu

 

 

Mor Kuzhambu, is a close cousin of the Kadhi,  served in the North along with rotis or rice . Mor Kuzhambu,  is made with a variety of vegetables like Ladies finger , Ash gourd , Chow chow, Pumpkin, dried Chundakkai ( Turkey berry ) dried Manathakkali etc. However , adding the bonda, in the Morkuzhambu , makes it very special. Its a dish,  which is made,  during special occasions like marriages . The Morkuzhambu is made with slightly sour curd . The spices added are mild and is soothing to the stomach . especially during the summers .

Ingredients

  1. Curd  2 cups ( whipped )
  2. Urad dal 1 cup
  3. Cumin seeds  1 teaspoon
  4. Green chilies  4 ( chopped )
  5. Grated coconut   1 cup
  6. Salt   as desired
  7. Curry leaves   few
  8. For seasoning
  9. Coconut Oil   2 teaspoons
  10. Mustard    half teaspoon
  11. Dried red chilies    4
  12. Coriander seeds  half a teaspoon
  13. Omam seeds ( Ajwain )   half a teaspoon
  14. Oil for deep frying the bondas      half  a litre
  15. Coriander leaves  ( chopped )  handful

Method

  • Wash and soak the Urad dal for an hour .  Meanwhile , grind the coconut,  green chilies and cumin seeds in a mixir, to a smooth paste .
  • Add to the whipped curd . Add salt and mix well .
  • Grind the urad dal adding very little water , to a smooth batter , adding red chilies and salt . Heat oil for deep frying and make small size  bondas . Drain and keep aside .
  • Cook the curd in low heat and add the bondas in them . After two to three minutes , when it is about to boil and it froths up , keep aside . Add the Bondas .
  • In a shallow pan ,  add coconut oil and when it heats up add mustard . Add red chilies , coriander seeds ,  Ajwain seeds and curry leaves .
  • Season  Mor Kuzhambu  .  Garnish with coriander leaves
  • Absolutely delicious Mor Kuzhambu is ready .
  • Try to use , slightly sour curd . If the curd is fresh, it can be used  too. Add more green chilies , to increase the spice level, of the mor kuzhambu .
  • Turmeric powder , can be added to the recipe to get a rich yellow colour .
  • Coconut can be avoided and green chilies and cumin seeds , alone can be ground and added to the dish .
  • Masala Vadais or Ama vadais can be added instead of Bondas , to the recipe
