Ghee Rice/ Nei Soru

 

 

Ghee Rice , is a easy and a quick rice dish , which can be made without much ingredients  . Ghee rice , tastes awesome and can be a perfect lunch box option for children  . The flavours  of the Indian spices,  make the rice taste yummy. Its an ideal option , for a party or when guests come, suddenly . Ghee rice, also pairs very well with Rajma , Aloo Gobi , Baingan Masala etc. Always use good quality rice, to make Ghee rice and use ghee a little liberally .

Ingredients

  1. Basmati rice or Seeraga Samba rice   1 cup
  2. Ghee quarter cup to half a cup
  3. Cumin seeds 1 teaspoon
  4. Bay leaf    1
  5. Star Anise    2
  6. Cloves        4
  7. Cardamom   2
  8. Cinnamon    2 inches .
  9. Cashewnuts ( optional)    few
  10. Water  1 cup
  11. Salt  as desired
  12. Coconut milk  1 cup

Method

  •  Soak the rice for 20 minutes . In a pressure pan or   deep pan or instant pot ,add ghee .
  • When it heats up, add cumin seeds . As it splutters , add bay leaf , star anise , cloves , cardamom and cinnamon.
  • Saute for a thirty seconds . Add cashewnuts . Shallow fry for a minute.  Add rice and saute for a minute and then add water and coconut milk and salt  .
  • Pressure cook for a whistle or cook in a  rice a cooker or dee pan till the rice is just cooked but not mushy .
  • With a fork fluff it up and serve hot with a nice spicy side dish .
  • Ideal One Pot dish .
  • You can use  in coconut milk to cook rice  or cook in plain water alone , too . Use less water ( 1 1/2 cups totally ),  if Basmati rice is used .
  • Using coconut milk , enhances the flavour of the dish.
