This is a traditional recipe made as an evening snack or early dinner or when special guests turn up , unexpectedly.
Also when the rice dough gets leftover from making Kozhukattais after Ganesh Chathurthi, this simple tasty , filling and healthy recipe is prepared .

- Rice flour 2 cups
- Water 2 cups
- Salt 1 teaspoon
- Ghee 1 teaspoon
- Sesame Oil 1 tablespoon (for seasoning)are cookd
- Mustard 1 teaspoon
- Curry leaves few
- Chana dal 1 teaspoon
- Urad dal 1 teaspoon
- Green chilies 4 chopped fine
- Ginger grated 1 teaspoon
- Coconut grated 1/4 cup ( optional)
- Turmeric powder 1/2 teaspoon ( optional)

- In a deep bottomed kadai , add water and boil. Add ghee and salt . Add the rice flour gradually and stir with a long sturdy ladle. Mix well .
- The flour will absorb the water and move as a single mass, after about five minutes. Stir often.
- Remove from fire and cover and keep aside .
- When cooled a bit , knead the dough well . Dip your fingers in ghee and pinch small marble sized balls from the dough.
- Roll out as many as possible. Arrange them in a idli pan or idiyappam pan and steam for 6 to 8 minutes.
- Meanwhile in a sauce pan, heat sesame oil . Add mustard , when it crackles , add green chilies, ginger , turmeric powder ,dals and curry leaves . Saute for a minute .
- After the Ammini Kozhukattais are cooked , remove from the steamer . Add the seasonings and garnish with coconut gratings.
- Tasty Ammini Kozhukattais are ready.

Note
- Ulundhu Poornam if leftover after making Kozhukattais , can be sprinkled over the Ammini Kozhukattais , to get a tasty Kozhukattai.
- Ellu Podi or Molaga Podi too can be used as a garnish to make them tasty.
