One of the most common breakfast dish served in Maharashtra .
It’s a very easy , quick recipe to make , filling and nutritious, can be had , as an evening snack or as an anytime snack .
Ideal for lunchboxes too
There are many versions of the recipe . This one is a very simple , gluten free recipe .
Aval /Flattened Rice /Poha (thicker variety ) 2 cups
Oil 4 tablespoons
Onions 2 chopped fine
Boiled and cubed potatoes 1 cup
Curry leaves few
Cumin seeds 1 teaspoon
Mustard 1 teaspoon
Asafoetida 1/2 teaspoon
Ginger two inches grated
Green chillies 4 chopped
Lemon juice 2 tablespoons
Salt 1 teaspoon
Turmeric powder 1/2 teaspoon
Coriander leaves 1/2 cup chopped
Peanuts 1/4 cup
Grated coconut (optional)
Method
Wash the flattened rice two or three times . Drain and keep aside. By this time the poha would have softened.
In a sauce pan , add oil , heat it .
Add mustard and when it crackles ,add ginger , green chillies, peanuts and asafoetida .
Add curry leaves and turmeric powder too .
Saute . Add onions too .
After a minute , add boiled cubed potatoes , stir again. Saute for two to three minutes . Add drained aval to the kadai .Stir and add salt .
Mix well.
Sprinkle coriander leaves and grated coconut . Add lemon juice on top and mix again .
Serve hot .
You could add some sev or omapodi on top to get a crunchy feel.
You could also add more vegetables of your choice , like capsicum , tomatoes , peas etc to make it , more healthier .
To make it spicy , you can add chilli powder or Sambaar powder .
