Almond Milk is a popular drink , which is served to guests, on festivals or on special occasions. As Almonds are rich in taste , good for skin and bones, its used liberally in many , Indian desserts.
Almonds Milk or Badaam Paal, as its known in Southern India , is a hit with young children. They are good immunity boosters, good for eyesight and help in insomnia . It can be served hot or cold .
In the recipe below, milk is added to make the Almond milk . It can be made without milk too , for vegans .
Ingredients
- Almonds half a cup
- Milk half a litre
- Sugar 4 to5 table spoons
- Safforn 4 to 5 strands
- Cardamom powder half a teaspoon
Method
- Soak the Almonds in hot water for an hour . Drain and remove the outer covering . Grind the peeled almonds, adding one fourth cup of milk .
- Make a smooth paste . Boil rest of the milk , add the almond paste and cook in low flame for 3 to 4 minutes .
- Add sugar and cardamom powder.
- Stir and remove from fire and garnish with the saffron strands .
- Some almond flakes can be added, to the boiled almond milk , while serving .
- For small children ,avoid the almond flakes ,as they may choke on them .
Serve immediately or serve chilled .
Note
- Almonds can be taken in large quantities , soaked and peeled . Grind them , adding water, to a thick paste . Add sugar and mix well .
- Cook in low heat for a minute or so . Add sugar and stir . Add cardamom powder and saffron . Stir and remove from heat .
- Refreshing Almond milk is ready.
