Sambaar or Sambhaar id usually made with tamarind or tomatoes and loads of spices . This particular Sambaar is little unusual . It is made from Buttermilk as the name suggests, and tastes like moar kuzhambu . Ladies finger , deumstick and brinjal/ aubergine are ideal for the Mor Sambaar Potatoes , chow chow (chayote squash) Ashgourd can be added too , but are second choices.

- Buttermilk or curd 1 cup (whisked)
- Tuvar dal 1/2 a cup
- To make a paste
- Coriander seeds 1 1/2 teaspoons
- Dried red chilies 4
- Bengal gram dal (chana dal) 1 teaspoon
- For seasoning
- Oil 1 tablespoon
- Mustard 1 teaspoon
- Green chilies 4 (chopped )
- Dried red chilies 4 Broken into two
- Curry leaves few
- Coriander leaves ( chopped fine ) 1/4 cup
- Ginger grated 1 teaspoon
- Salt as desired
- Turmeric Powder 1/2 teaspoon
- Vegetables half a cup ( roughly chopped Ladies finger / Brinjal or Drumstick)

- Pressure cook the dal till it becomes soft and mushy .
- Whisk the curd or buttermilk and add salt , turmeric powder and keep aside.
- Dry roast the ingredients for the paste , in a deep pan and grind them to a fine powder .
- In the same pan heat oil . Add the mustard , as it crackles , add dried red chilies , green chilies and curry leaves .
- Saute for 30 secs . Add the vegetables and shallow fry for two to three minutes .
- Add the butter milk and bring to a boil.
- Add the prepared powder and cooked dal , mix well.
- Cook for a minute or so.
- Remove from fire and add coriander leaves and ginger .
- Serve with Rice and curry of your choice .
