Sometimes the routine of making rice , kuzhambu and separate vegetable, a kaara curry or koottu, bogs you down . So you end up making a quick nutritious and a sumptuous one pot meal .
VEGETABLE PULAO /PILAF OR PULAV .
This one pot recipe will not only satiate your hunger but also take your taste buds to new level.
Ideal Lunch box, Picnic recipe.
Ingredients
- Basmati Rice or rice you prefer (ponni raw rice) 1 cup
- Cabbage .. shredded 1/4 cup
- Carrots chopped small 1/4 cup
- Peas 1/4 cup
- Beans chopped small 1/4 cup
- Onions 1/4 cup
- Ginger 1/2 tsp grated(optional)
- Garlic 1/2 tsp (peeled and smashed )
- Green chillies chopped 2 numbers
- Cinnamom 1 inch
- Cardamom 1 pod
- Cloves 2
- Bay leaf 1
- Mint leaves (optional)
- Coriander leaves (optional)
- Oil 1/4 cup
- Ghee 2 tablespoons
- Cumin seeds 1 teaspoon
- Coriander powder 1 teaspoon
- Chilli powder 1 teaspoon
- Salt 1 1/2 tsp or as desired
- Water 2 cups
Method
Note
- Soak basmati rice for 15 minutes or so .
- In a kadai , add oil and ghee, when heats up , add cumin seeds , cardamom , cloves , bayleaf and saute
- for a minute or so .
- Make a smooth paste of onion , green chillies, garlic and ginger .Add and shallow fry again .
- After two to three minutes , add vegetables , and saute , in high flame , stirring , for two to three minutes
- Add soaked rice , salt , coriander and mint leaves .
- Stir .
- Add water and ghee , mix well , cook in medium flame , covered , till the rice and veggies are cooked .
- Cook till the rice is soft and separate .
- Serve the dish with Raita of your choice.
Note
- If more water is needed , sprinkle at little .
- Don’t add more water , as the pulao will get mushy.
- Also don’t overcook , the grains won’t be separate , but stick together .
- Use aged rice , so that it needs less water , to cook .
If you soak the rice , it will cook faster .
- The above method can be replicated , in a pressure cooker.
