Semolina Burfy/ Rava Burfee

Indians love sweets of all kinds and there are umpteen variety of sweets in Indian cuisine.

This a quick and tasty recipe which can be made with simple ingredients in the kitchen. This recipe is similar to rava kesari ,however in this recipe coconut is added to the recipe .

  1. Semolina (fine texture) 2 cups
  2. Grated coconut 1 cup
  3. Sugar 3 to 4 cups
  4. Ghee 1 cup
  5. Cashew nuts 1/4 cup
  6. Cardamom 3/4 teaspoon

  • In a thick bottomed pan , heat  2 tablespoon of ghee. Add grated coconutand shallow fry  to reddish brown colour .
  • Remove and keep aside .
  • Fry cashewnuts too, to brown colour and drain and keep aside.
  • Add half cup ghee and heat it. Add  semolina and shallow fry to a light  brown colour .
  • Remove and keep aside .
  • Add one and half cup water to the kadai and boil it . Add sugar and dissolve it well . When the sugar starts boiling , take a a drop and check for one string consistency.
  • Take a little of the sugar solution between the thumb and forefinger and stretch it. If it stretches to make a single string , that is single string consistency.
  • Add fried rava , grated coconut and cashewnuts. Mix well and stir continuously  .
  • Cook for two to three minutes . When everything blends well , add ghee and stir.
  • Let the whole mixture cook well and go on stirring . When all the ghee is absorbed and the mixture swells up, remove from fire .
  • Add cardamom powder and mix well.
  • Pour into a greased tray.
  • Tap the plate to level the surface and cut into desired shapes,
  • Cool and remove . Enjoy with family and friends.

Note

  • If you eat less sugar , adjust the quantity of the sugar , accordingly.
  • if you want to add color to the above Burfee you could add , color of your choice.
