Various dishes are made from the Raw mango , especially when it is in season . The Mango Pachadi is especially made , to celebrate Tamil New year, in the month of April. This sweet and tangy preparation is delicious and is savoured during the summer months .

Ingredients
- Green unripe Mango – 1 (big one) chopped to medium sized cubes,
- Jaggery – 100 grams,
- Salt – ½ teaspoon,
- Turmeric powder – ¼ teaspoon,
- Ghee – 1 teaspoon,
- Mustard – 1 teaspoon,
- Green chillies – 2 chopped fine,
- Water – ¾ cup,
- Curry leaves – 1 tablespoon.
Method
- Chosen Mango should be neither too tender or ripe. It must be both sweet and sour . Chop them with their skin intact .
- Heat water in a pan or a vessel, add the mango pieces, salt and turmeric powder, Cook till soft.
- Add jaggery and give it a stir. As it dissolves it becomes watery, mix well.
- As the jaggery blends , add 1 teaspoon rice flour (optional ) mixed with a teaspoon of water .
- Cook in low heat till one to two minutes.
- Heat ghee in another small pan, add mustard and green chillies, as it sizzles drop in the curry leaves.
- Garnish the pachadi. The delicious pachadi is ready to be devoured.
- Variation : You can add neem flowers which are fried in ghee to the pachadi. This is made during the Tamil New Year.
