Paal Poli or Milk Poli is a sweet delicacy from Tamilnadu . Its a traditional sweet , which melts in the mouth and is extremely easy to make . Its generally served in weddings and on special occasions and festivals like Pongal , Aadi Velli , Navaratri , Deepavali etc. Pooris made from Maida or Semolina are deep fried and then soaked in thick Payasam or Kheer , made from full cream milk . Its a sweet which is not overly sweet and is like by all age groups. For Semolina Paal Poli , Chiroti Rava or very fine Rava is used .
Ingredients
Ingredients for Paal Poli
- Semolina ( Chiroti ) 2 cups
- Salt a pinch
- Water to make dough 1 cup
- Ghee 8 teaspoons ( for kneading the dough)
- For the Paal or Milk
- Milk 1 litre
- Sugar 1 cup
- Cardamom half a teaspoon
- Kesari powder a pinch
- Saffron few strands ( optional )
- Pachaikarpooram / Edible camphor a pinch
- Ghee for deep frying
Method
Method to make Paal Poli
- Knead the semolina adding salt with sufficient water to make a stiff dough . Rest the dough for half an hour or so.
- Smear four teaspoons of ghee and pound with a pestle on a hard floor or counter top , till it becomes soft .
- Smear once again with some ghee and knead vigorously . pound again and keep aside for half an hour .
- Meanwhile boil milk and cook on low heat till it reduces or becomes s a little thick. Add sugar and mix well .
- Add cardamom ., pachaikarpooram , saffron and stir.
- Keep aside .
- Heat ghee in a kadai . Keep the ghee in low fire .
- Make pin pong sized balls from the dough and roll them to small polis . Check if the ghee, has reached the correct temperature, to deep fry . Add a bit of a dough into the ghee .
- If it sizzles and comes up, its ready to be deep fried .
- Deep fry polis, in hot ghee , as they swell up , on both sides , remove and drain .
- Soak the polis, in the milk .
- After you soak the first poli in milk , deep fry the second poli . When its drained . remove the first poli from the milk and add the second poli to the milk.
- Repeat for the rest of the Polis.
- Arrange all the soaked Polis in a plate , in the end and pour rest of the milk , left . Garnish with nuts and saffron , if desired .
Note
- Do not soak the Polis for a long time in milk . Remove in them in two to three minutes .
- Otherwise the Polis may tear , while serving .
- The Poli dough , can be made with the combination of maida and semolina or with maida alone .
