Pumpkin is a nutritious vegetable, which is nutrient dense. This Pumpkin curry is very tasty and is simple to make . The Pumpkin cooks faster , so its delicious to taste . This Pumpkin curry can be served with rice .
Ingredients
- Pumpkin ( chopped to medium size ) 2 cups
- Turmeric Powder 1/2 teaspoon
- Salt 1 teaspoon
- Curry leaves few
- Oil 1 teaspoon
- Mustard 1 teaspoon
- Green chilies 2 ( chopped fine )
- Dried red Chilies 2 ( broken into two )
- Hing or Asafoetida 1/2 teaspoon
- Grated coconut ( 1/4 cup)
Method
- Steam the Pumpkin pieces , adding turmeric , curry leaves and salt in a electric rice cooker . When cooked three fourths , remove and keep aside .
- In a seasoning ladle or a shallow pan , heat oil . When it gets hot, add mustard . When it crackles , add red chilies ,green chilies and hing .
- Garnish over the cooked Pumpkin . Add grated coconut if desired .
- Serve hot with rice .
