This is a healthy carbohydrate and is rich in iron. Its low in calories too and it helps to keep the blood sugar level low. This is an ideal breakfast menu , or can be made when the children come home hungry , from school. Its very easy to make and filling. This is easily digestible too. Generally Poha or beaten rice flakes are made with onions ,peanuts and seasonings . Here tamarind is added to give a South Indian twist to it.
Ingredients
- Tamarind as big as lemon (soaked in half cup of water),
- Aval or beaten Rice 2 cups
- Salt 1½ teaspoon,
- Turmeric powder ¼ teaspoon,
- Oil 6 to 8 teaspoon,
- Mustard 1 teaspoon
- Black gram dal 2 teaspoon,
- Bengal gram dal 2 teaspoon,
- Asafoetida ¼teaspoo
- Red chillies broken into two,
- Green chillies 4 to 5 (chopped fine)
- Curry leaves few,
- Coriander ( chopped ) ¼ cup.
Method
- Extract thick juice from the soaked tamarind.
- Wash the beaten rice or aval ,drain and mix the tamarind juice with the Aval .
- In a pan heat oil, add mustard as it pops, add black gram dal, bengal gram dal, curry leaves, red chillies, and asafoetida.
- Shallow fry till the dal changes to golden brown.
- Add beaten Rice, salt, turmeric powder .
- Cook till the beaten rice is soft, which will take about 3 to 5 minutes.
- Sprinkle water over the aval,if needed to cook.
- Garnish with coriander leaves.
Note
One can add grated coconut or roasted peanuts to make the aval more interesting.- One can add vegetables like potato and peas, omitting the tamarind and make it more nutritious.
