When people mention Poli , one thinks of the sweet made of jaggery and coconut which is also called Poli. However, a salty tasty version of Poli , is Potato Poli . As the name suggests , its made of Potato. This is very easy to make and resembles the Aloo Paratha. Its an ideal snack or makes for a delicious Sunday breakfast .
Ingredients
- Maida 2 cups
- Turmeric Powder a pinch
- Salt 1/4 of a teaspoon ( for the dough)
- Water to make the dough
- Potato half a kilo
- Green chilies 6 chopped fine
- Mustard 1/2 teaspoon
- Coriander leaves (chopped fine ) 2 to 3 tablespoons
- Lemon juice 2 teaspoons
- Asafoetida ( hing) 1/4 teaspoon
- Ghee or Oil 4 teaspoons (for the dough )
- Oil for shallow frying 1/2 cup
Method
- Cook the Potatoes very well. Peel and mash them.
- Take Maida in a big bowl , add turmeric powder and salt and mix well . Add 4 teaspoons of ghee and mix again .
- Add water and make a soft pliable dough , not too loose or not too stiff.
- Add more oil or ghee , if needed. Keep aside for 15 minutes.
- In a saute pan heat , add one teaspoon of ghee and heat it . Add mustard , when it crackles . Add asafoetida and green chilies . Add mashed potatoes . Give a stir .
- Add salt as desired and mix well . Add coriander leaves and lemon juice .
- Take a small lemon size ball from the dough , and roll it into a small puri. Add 2 teaspoons or a little more of the filling . Bring all sides to the centre to make a ball and seal the centre..
- Grease your fingers and flatten them , with your fingers to make a thick Poori or Poli. You can use a rolling pin to roll too .
- Heat a chapati tawa / griddle , grease it well with ghee . Shallow fry the Polis in the hot tawa or griddle to golden brown .
- Flip to the other side , cook the other side too, by drizzling oil all over the Poli.
- Shallow fry in low heat .
Repeat the same for the rest of the dough.
