Potato Curry with Powder

The most loved vegetable, Potato is a versatile and it tastes good in any form.

This Potato Curry can be teamed with Shallots sambar or (small) onions sambar to get a heavenly meal. Its also a savior during those lazy day when you don’t want to cook anything elaborate but would like something tasty. Its easy to make and delicious to eat.

Ingredients

  • Potato 5 to 6 medium sized potatoes (boiled and peeled),
  • Onions 2 , chopped fine
  • 5 dried red chillies,
  • 2 tsps Bengal gram dal,
  • 2 tsps coriander seeds,
  • Oil  8 teaspoon,
  • Salt 1 ½ teaspoon,
  • Mustard 1 teaspoon,
  • Turmeric powder 2 pinches.

Method

  1. Heat 2 teaspoon of oil, add coriander seeds, red chillies and Bengal gram dal and shallow fry to golden brown.
  2. Grind to a smooth powder along with salt.
  3. Heat 6 teaspoons of oil in a deep pan, add mustard, as it pops ,add onions. Shallow fry to transparent.
  4. Add the potatoes which are cooked and peeled (either cube them or crumble them with hands) and add.
  5. Sprinkle turmeric powder and the ground powder and mix well and cook for a minute or so.
  6. Remove and serve with hot rice and sambar.
