Plantain stem is very good for removing impurities from the stomach. It’s anti ageing properties are well known. It cleanses the system and hence is a good weight loss agent. It’s also good for acidity and helps in heartburn problems.
The juice of the stem cleanses the stomach and due to high fibre content aids weight loss.

Ingredients
- Plantain stem chopped fine 4 cups,
- Salt 2 teaspoon,
- Tamarind juice or buttermilk ¼ cup,
- Mustard 1 teaspoon,
- Black gram dal 2 teaspoon,
- Red chillies 4,
- Red gram dal or green gram dal(cooked) ¼ cup,
- Curry leaves few,
- Coconut gratings ½ cup,
- Turmeric powder ¼ teaspoon,
- Oil 4 teaspoon,
- Water ½ cup,
- Asafoetida powder ½ teaspoon,
- Sugar 1 teaspoon.
Method
- Select a tender stem and cut thin circular rounds. Remove fibre as you cut them.
- Soak them in weak butter milk water (Add 2 ladles of curds to 6 cups of water, mix well), otherwise the chopped plantain stem will turn dark.
- Parboil the plantain stem adding turmeric and salt, add butter milk /tamarind water and cook again in low heat, till completely done. However make sure they don’t get over cooked.
- Heat a pan, add oil and while hot add mustard.
- Add black gram dal, red chillies. Add the cooked dal and give a stir for a few seconds.
- Add asafoetida powder, sugar and curry leaves. Add the cooked plantain stem.
- Mix and then add coconut gratings and stir for a a minute or so .
- Tasty, healthy plantain stem curry is ready to serve with hot piping rice. Enjoy.
- The plantain stem has lots of fibre, so while cutting you should bear this in mind.
- Make sure while chopping the plantain stem , the fibres are removed completely,. Otherwise the poriyal won’t be tasty.
- As you cut the stem in circular rounds, the fibres will come out , remove them with the fingers and cut the tender slices.
