Pattani Bhath/ Green peas Pulao

 

Peas Bhath is a quick meal which can be prepared, when you are short of time. Its a one pot recipe , which is filling and tasty . The spices are mild and can be enjoyed by all age groups. When you get fresh green peas you can make them often. Usually down South most biriyani or Bhaths are made from Sona Masoori rice / Jeeraga Samba rice . The practice of making Pulao or Biriyani is quite recent in Tamilnadu. Rice is usually cooked as Brinji Rice which is more popular than the Biriyani . Coconut milk is used heavily, in cooking rice and therefore the rice gets a distinct taste or aroma.

Ingredients

  1. Green Peas half a cup ( shelled )
  2. Rice ( good qualty ) 1 cup
  3. Green chilies 6 chopped fine
  4. Coconut grated 2 cups
  5. Onions ( chopped fine)  2
  6. Cashewnuts 12 to 15 (broken)
  7. Ghee / Sunflower  Oil      half a cup
  8. Garam Masala Powder 1/4 teaspoon
  9. Salt 1 1/4 teaspoons

Method

  • Soak the rice for 20 minutes . After 20 minutes , drain the rice and keep aside .
  • Add  1 cup of water to the coconut and grind to extract milk . After filtering the first batch , add 2  more cups of water to the grated coconut and grind again .
  • Squeeze and extract the second batch. This way you get a thick milk from the first batch and a thinner milk from the second batch.
  • In a deep bottomed pan or kadai , add 2 teaspoons of ghee and shallow fry the cashewnuts .  Drain and remove with a slotted spoon.
  • Add the chopped onions and shallow fry till reddish brown. Drain and keep aside .
  • Add rest of the ghee , add the soaked, drained rice and shallow fry .
  • Add the second extract  ( 2 cups ) of the coconut milk.   Cook covered  in medium flame . Once it boils , add the green peas ,salt and green chilies .
  • Cook in low flame, covered , until its half done . Add the first extract of the coconut milk and cook till its done .
  • The grains should be soft but firm and not mushy.
  • Add the garam masala on the top and fluff it up.
  • Sprinkle  the fried cashewnuts and onions  on top as a garnish.
  • Tasty Peas Bhath is ready to eat with Raita .

Note

  • The garam masala powder can be made by shallow frying , Poppy seeds 1/4 teaspoon, Cloves 2 , Cardamom 2, Anise 1/4 teaspoon and Cinnamon one inch, till they give out aroma .
  • Powder them and use .
  • Basmati or other good quality rice can be used .
  • While cooking add the coconut milk with caution. If you feel the quantity of milk is more , then add less milk .
  • If more milk is needed  to cook rice , it can be replaced with water too .
  • The above recipe can be made in the pressure cooker too .
  • Add all the ingredients , except the garnish and garam masala and cooked for 2 whistles .
