Paasi Paruppu Idly (Green gram/ Moong dal steamed dumplings)

These idlies are different from the staple idlies we eat , which are usually  made from boiled rice and blackgram dal combo. These idlies have green gram or moong dal instead of rice as the name suggests.As green gram dal is a good source of protein and is rich in amino acids ,their addition  should be a part of a vegetarian diet. They are  also high in fibre content and rich in antioxidants. The black gram in the idly is source of energy and promotes digestion . This combination of idly can be a ideal breakfast recipe or a snack as its healthy and tasty.

  • Green gram dal  1cup
  • Black gram dal  1 cup
  • Salt  as required
  • Water to soak and grind the dals

Method

Method

  1.  Soak the dals separately in a bowl, adding sufficient water so that they are fully covered.
  2. Soak them for 3 to 5 hours. Drain the water and  grind them in a food processor or mixie to a smooth batter . The batter should be smooth and flowing but not runny.
  3. Now add salt to the batter  and mix . Cover and let it remain in your kitchen undisturbed , for 8 to 10 hours to ferment .
  4. After it ferments , mix well .
  5. Grease idly moulds with oil. Pour the batter into each  mould with a ladle to the brim.
  6. Take a steamer or a idli vessel. Heat  three cups to four cups of water in it .  Transfer the idly stand to the steamer or idly vessel. Steam for 10 to 12 mins or a little more .
  7. Switch off the heat once the vessel cools , remove the idly  stand from the vessel and remove the idlies with a spoon.
  8. Serve hot with coconut chutney , tomato or green chilli chutney.

Note

  • Make sure that the idlies have cooled well , before removing from the moulds . If not they will break.
  • The batter should ferment very well , otherwise the idly will taste bland.
  • Split green gram and black gram dal (without skin ) should be used , to get a great tasting idly.
  • The batter should be well fermented , otherwise the idly would’nt tast e nice.
  • If idly hasnt fermented and you need to make the idlies immediately , add sour curd to the batter and mix well.
  • To know if the idly has cooked well, slide flat side of a spoon into the idly and remove, the spoon should come clean.
