Oothappam

South Indian breakfast are carb heavy and are tastiest .
Most of us depend on our morning breakfast fix before starting our busy day . A hearty breakfast should be filling , natural and nutritious .
The oothappam fits the bill , perfectly . The oothappam is a thick dosai , which is prepared from the dosai batter itself or making a special batter for the same .
Oothappam , sprinkled with onions , tomatoes , bellpeppers , carrots etc is a delight to have with thick kaara chutney .
The vegetables added give all the vitamins , sesame oil the necessary fat and rice and blackgram in the oothappam gives carbohydrate and protein.

Serves 4
Idly rice 2cups
Red gram dal l cup
Fenugreek seeds 1 tablespoons
Salt 1/2 cup
Vegetables to be added
Onions , bellpeppers tomatoes (chopped fine ) two each
Carrots (grate)
Sesame oil half cup
Method

Method

Soak rice and dal separately . Add fenugreek seeds to red gram dal .After soaking for 3 to 4 hours .Grind rice to a rough batter . .
Grind the dal and fenugreek seeds to a gurgling spongy batter.
Mix together both batters , add salt and give a nice mix again .
Let it remain so for 8 hours to ferment .
In a dosaikkal /cast iron pan , add oil and grease the pan.
Take a big ladle of the batter , spread it on the pan in circles . Make the oothappam thick in texture .Cook in medium heat .
Sprinkle a tablespoon each of the chopped vegetables over the oothappam .
Pour a teaspoon of oil around the circle .
Cook till golden brown .
Turn over with a flat ladle. Cook the other side too.
When done , remove , serve hot with chutney .
Delicious vegetable oothappam is ready .
Please note the oothappam can be made from the dosai batter itself .
But this batter will give a better taste , colour and flavour to the Oothappam .
