Kesari is a common sweet, which is generally made from Semolina . Its a quick ,tasty recipe which never fails to delight, all. However. in this recipe , oats is used to , make the kesari , for a change . this recipe too gets done in a short time and is as tasty as Semolina Kesari . It can be made when guests come unannounced or as an offering to God during festivals or simply as a sweet indulgence .
Ingredients
- Oats ( quick cooking oats ) 1 cup
- Sugar three fourths of a cup
- Milk or Water 2 cups
- Ghee 1/2 cup
- Cardamom powder half a teaspoon
- Turmeric Powder (for colour ) half a teaspoon
- Cashwenuts 8 to 10 numbers
- Raisins 1 teaspoon
- Edible camphor a pinch (optional)
Method
- In a thick bottomed kadai, add a quarter cup ghee , and shallow fry the cashewnuts . When they become light brown remove and keep aside .
- Add the raisins and stir . When they swell up , drain and remove. Keep aside .
- Add oats and shallow fry till reddish brown. Add the milk or water and cook till soft .
- Add sugar and stir the sugar, till it dissolves , in the oats mixture and makes it watery. Cook in low heat , till all the moisture is absorbed .
- Add the rest of the ghee and stir again , till the whole mixture ,moves as a single mass , without sticking to the pan / kadai.
- Add the cardamom powder , nuts , edible camphur and mix well .
- Add the turmeric powder to get a yellow colour to the Kesari . Serve hot .
Note
- Artificial colours can be used to provide a vibrant colour to Kesari .
- Use of sugar and ghee can be reduced or increased according to one’s taste .
- Use instant oats for this recipe. If using steel cut oats , it needs a longer time to cook .
- Jaggery powder or country sugar can be used to make the above kesari.
