One of the tastiest and crunchiest vadai is Potato Vadai . These are made from Potato which is liked by one and all . This will be a hit starter in any parties . It is also an ideal evening snack along with tea . This Vada is crowd puller and is liked by young and old alike. They can be easily made at home in shortest time too . However like all munchies , this vadai is best served hot.
Ingredients
- Urad Dal ( Uluntham Paruppu ) 2 cups
- Rice 1/4 cup
- Potatoes 4 medium size
- Green chillies 8 ( chopped fine )
- Dried red chilies 8
- Grated ginger 1 teaspoon
- Curry leaves a handful ( torn into two)
- Coriander leaves ( chopped ) 1/4 cup
- Salt 3 teaspoons
- Oil (for deep frying ) half a liter
Method
- Soak the Urad dal and rice for 2 to 3 hours. Don’t soak it longer , otherwise the vadai, will absorb more oil.
- Drain well and grind to a smooth firm batter , adding salt , chilies , ginger and asafoetida to a firm paste. Add a little water as it grinds.
- The batter should’nt be very loose or watery .
- Add grated potatoes , curry leaves and coriander leaves. Mix well.
- Heat a deep bottomed pan and add oil .
- Drop a less than half a teaspoon of the paste into the oil . If it comes up sizzling , the oil is ready to deep fry.
- Take big lemon size balls from the paste and roll and flatten in you palm / on a banana leaf or a plastic sheet , to the size of the vadai .
- Make a hole in the centre and slide into the oil . At a time two or three such Vadais can be made and dropped into the oil and deep fried .
- Deep fry in medium heat , to golden brown or reddish brown.
- Drain in a colander and spread over an absorbent paper to remove excess oil.
- Tasty , finger licking snack is ready.
- This vadai should be served hot .
