Malayala Adai

 

 

This is a Lentil based thick pancake or dosai , which is filling and full of proteins . Generally its eaten with jaggery and butter or served with Avial .

In this particular recipe , whole blackgram dal is used with its outer covering .

 

Ingredients

  1. Boiled rice  2 cups
  2. Urad Dal ( whole ) 1/2 cup ( with skin)
  3. Tuvar dal 1/4 cup
  4. Salt 2 teaspoons
  5. Red chilies  7 to 8
  6. Asafoetida 1/2 teaspoon
  7. Coconut ( grated)  1/2 cup
  8. Curry leaves for garnish
  9. Sesame oil for shallow frying   1/2 cup

Method

  • Soak the rice and dals in a wide bowl . Wash and clean, after two to three  hours .
  • Grind them coarsely , adding salt red chilies  and asafoetida . Add half to one cup water , while grinding ,to make a thick batter.
  • Add some curry leaves and coconut gratings . Mix well .
  • In a tawa or a thick pan , grease adding a teaspoon of oil and add a ladle of the adai batter . With a back of the ladle, make a thick dosai .
  • Add sesame oil all over the edges, of the Adai and in the centre . Make a  hole in the centre and four to five holes around it . Add oil in them .
  • Shallow fry, till they become , crisp and golden brown .
  • Cook the other side too . Serve hot with jaggery and butter .
  • A tasty , healthy high protein snack, is ready.
  • Black pepper / Ginger can be added too , to make the Adai more flovourful.
  • Reduce the quantity of the red chilies, if you add black pepper .
  • Vegetables like onions, cabbage ,carrot drumstick leaves can be added.
