Kulfi / Indian Icecream / Homemade Icecream

A decade or so ago , icecreams were made at home and relished during the summers  . Homemakers,  made a variety of icecreams, which were tasty and delicious. Milk is a common ingredient in all types of icecreams . Kulfi is a thickened milk , which is flavored with  cardamom and saffron , topped with a variety of nuts. Kulfi is denser icecream unlike other icecreams produced commercially. Some add khoa or mawa , condensed milk etc to make it a tasty recipe . Rose essence,  Pista essence , fruit pulp of mango , guava , banana , chickoo etc , are added to the kulfi to make it delectable . its a  favourite dessert served at  Indian weddings

Ingredients

 

  1. Full fat cream milk  1 litre
  2. Sugar  1  cup
  3. Corn flour 1 tablespoon
  4. Milk ( at room temperature ) 1/4 cup
  5. Heavy cream 1/4 cup
  6. Chopped nuts  4 tablespoons
  7. Saffron (optional)   few strands

Method

  • In a thick bottomed pan or wok , boil milk in low heat . Cook for half an hour or so . The milk will reduce to half the quantity.
  • Add sugar and stir  for a minute or two .
  • Mix the corn flour to the milk at room temperature . Stir to remove lumps . Add to the milk and cook for two to three minutes .
  • Add cream too and mix well .
  • The whole mixture will be thick and creamy .
  • Add chopped nuts and saffron . Cool .
  • Pour the thickened milk , over the kulfi moulds or in small bowls of your choice and freeze for 5 to 6 hours .
  • Yummy Kulfi is ready .
