Jackfruit Jam/ Chakkavaratti/ Kathal Ka Jam/ Jackfruit Preserve/ Palapazha Jam

Jack fruits are wonder fruits available only few months of a year, especially in the south. Many homemakers who want to relish its taste throughout the year Make it into jams, papads, chips etc. The jackfruit jam is extremely delicious is also known as chakka varatti. This can be stored for a long time especially if stored in the refrigerator.

Ingredients

  • Jackfruit pieces or bulbs or segments 4 cups, (chopped),
  • Jaggery 2 ½ cups
  • Ghee 1 cup.

Method

  1. Take the chopped jackfruit pieces and pressure cook till soft (three whistles). Mash it well with churner.
  2. Boil the water and add jaggery in a deep thick bottomed pan.
  3. When the jaggery gets dissolved filter it.
  4. Add the fruit pulp to the jaggery syrup and cook in medium heat in the thick bottomed pan, stir well.
  5. Add ghee now and then. When the whole mixture will starts moving without sticking to pan, remove and let it cool.
  6. Store in a cool place or bottle it. Can be had just like that or used in payasams. It tastes yummy.

Note


While removing seeds from the jackfruit do not throw away the seeds, use it to make curries and poriyals.
