Fenugreek leaves Koottu / Vendaya Keerai Koottu

 

 

When Fenugreek greens are in season, you can make a variety of dishes.These wonderful herbs are absolutely beneficial and are easy to prepare .

They are rich in anti oxidants , low in calories , control cholesterol and diabetes. They do wonders to the skin and hair and is good . They have high level of calcium and iron too . Therfore it is extremely beneficial for growing children.

When in season , buy them often and enjoy their benefits.

 

Ingredients

  1. Fenugreek leaves 2 cups   (cleaned and drained )
  2. Tuvar dal or Moong dal  3/4 cup ( cooked till mushy)
  3. Coconut 1/2 cup (optional)
  4. Oil 1 teaspoon
  5. Urad dal 1/2 teaspoon
  6. Dried red chilies 4 ( broken into two)
  7. Green chilies 2 chopped fine)
  8. Grated ginger 1 teaspoon
  9. Salt as desired

Method

Method

  • Pressure cook the greens, adding a little turmeric powder ( 1/2 teaspoon) for 2 whistles or cook till soft .
  • Mash them with a churner , roughly.
  • Add cooked dal , salt and mix well .
  • In a shallow pan , add oil . When it heats up , add mustard and chilies .
  • When the mustard crackles, add the urad dal  , grated coconut and ginger  .
  • Saute for a minute or two  and pour over the Koottu.
  • Delicious Koottu is ready to be eaten with hot rice .

 

 

Radish leaves , Amaranth leaves can be made in the same way.

Sambhar Powder can be added to the Koottu to enhance the flavor.
