When Fenugreek greens are in season, you can make a variety of dishes.These wonderful herbs are absolutely beneficial and are easy to prepare .
They are rich in anti oxidants , low in calories , control cholesterol and diabetes. They do wonders to the skin and hair and is good . They have high level of calcium and iron too . Therfore it is extremely beneficial for growing children.
When in season , buy them often and enjoy their benefits.
Ingredients
- Fenugreek leaves 2 cups (cleaned and drained )
- Tuvar dal or Moong dal 3/4 cup ( cooked till mushy)
- Coconut 1/2 cup (optional)
- Oil 1 teaspoon
- Urad dal 1/2 teaspoon
- Dried red chilies 4 ( broken into two)
- Green chilies 2 chopped fine)
- Grated ginger 1 teaspoon
- Salt as desired

Method
- Pressure cook the greens, adding a little turmeric powder ( 1/2 teaspoon) for 2 whistles or cook till soft .
- Mash them with a churner , roughly.
- Add cooked dal , salt and mix well .
- In a shallow pan , add oil . When it heats up , add mustard and chilies .
- When the mustard crackles, add the urad dal , grated coconut and ginger .
- Saute for a minute or two and pour over the Koottu.
- Delicious Koottu is ready to be eaten with hot rice .
Radish leaves , Amaranth leaves can be made in the same way.
Sambhar Powder can be added to the Koottu to enhance the flavor.
