Cauliflower Kurma , is an ideal side dish for Rotis , Parotta, Pooris or even Idiappams . Cauliflower Kurma, is a delicious dish, which will tickle your palate and take your taste buds, to new heights. Its an ideal Sunday dish, when the whole family gathers around the lunch table and enjoys a hearty meal , leisurely .
Ingredients
- Cauliflower 1 big
- Turmeric Powder 1/2 teaspoon
- Salt as desired
- Onions 2 big ( chopped fine)
- Tomato 6 ( chopped fine)
- Green chilies 4 to 6 ( chopped fine )
- Garlic pods ( 6 to 8, chopped )
- Ginger grated 1 tablespoon
- Coriander leaves for garnish
- Coconut ( grated) half cup
- Cashewnuts 10 to 12
- Fennel seeds half a teaspoon
- Khus khus seeds 1/2 teaspoon
- Fried gram or peanuts 2 tablespoons
- Oil 4 teaspoons
- Cumin seeds 1/2 teaspoon
- Cardamom 2 pods
- Cinnamon two inches
- Cloves 2
- Coriander powder 2 teaspoons
- Chili Powder 1 teaspoon
Method
- Cut the cauliflower , remove the stalks and retain florets. Cook in boiling water, along with some salt and turmeric powder , for five minutes , or till nearly cooked .
- Drain and keep aside .
- In a kadai or deep bottomed pan, add oil and heat it . Add green chilies , cumin seeds , grated ginger , garlic and shallow fry .
- After a minute , add cloves , cardamom and cinnamon. Stir and then add chopped onions . Saute , for two to three minutes .
- Add tomatoes and shallow fry, till the whole mixture becomes mushy , in low or medium heat . Add nearly cooked cauliflower and stir.
- Add salt , coriander powder and chili powder . Stir and add half cup hot water .
- Grind to a fine paste , coconut , fennel seeds , cashewnuts , peanuts / fried gram and khus khus seeds .
- Add to the cauliflower masala . Mix and cook, till five to six minutes , in low heat .
- Remove from heat and garnish with coriander leaves.
